Season chicken with salt & pepper.
Wrap chicken with bacon.
Use a toothpick to stabilize the end of the bacon.
Cook over the fire till finger pressure to the center doesn't give.
Thanks for this, Denise! It sounds delicious. The bacon would flavor and moisten the chicken.
This would be tasty paired with potatoes wrapped in foil and cooked in the coals.
When I've tried cooking chicken over a fire, I've had one problem: the chicken often burns on the outside before it is cooked all the way through.
I wonder if marinating the chicken in advance would help? I think that I'll try making a simple marinade - like this one:
I'll soak the chicken in the marinade for a few hours (in a fridge or cooler).
Then I'll cook it on a grill over a bed of very hot coals - not over a flame.
Of course, no matter how you cook chicken, it's very important to cook it thoroughly. Be sure that there is no pink remaining.
Everything tastes great when it's cooked over a fire!
